01 · Fresh strawberry
Short life. Long to-do list.
Fresh strawberry arrives as a perishable mass that must be received, chilled, sorted, washed, hulled and trimmed before anyone can use it.
The ingredient is only the beginning.
What happens before service determines what the ingredient really costs.
Fresh brings more than flavor.
Preserve the ingredient. Simplify the operation.
Freeze-drying: water leaves as vapor; the fruit keeps its shape, color and aroma.
From fresh complexity to operational format.
One ingredient. Multiple possibilities.
Avocado, rethought for execution.
Fresh → powder → controlled water → culinary base.
Less cold-chain pressure. Less prep pressure. More operational control.
THE ESSENCE FOODTECH
Ingredients that perform.
Food Supply Optimization.
Our commitment
Every professional kitchen deserves supply that behaves the same every day. We work so the ingredient stops being a variable and becomes an operating standard.
A specification for every product, samples before scale-up and no technical figure published until it is validated.
The same recipe card, the same dose and the same result in every shift, kitchen and location.
Waste, prep hours, cold space and cost per usable serving: whatever changes gets measured.
Diagnosis, pilot, validation and scale-up alongside your kitchen and purchasing teams.
No promises we cannot measure.
Certifications and compliance
Scope and validity per product and plant. A copy of each certificate is available on request.
03 · Operational diagnosis
Select a cost driver to see where it appears in the chain:
The question isn’t what an ingredient costs. It’s what it takes to use it.
Annual price stability
Fresh produce changes price every week — sometimes every day — with season, weather and supply. With The Essence FoodTech you agree one annual price per product and stop living with the stress of those swings in the supply of your food service channels.
05 · Strawberry transformation
01 · Fresh strawberry
Fresh strawberry arrives as a perishable mass that must be received, chilled, sorted, washed, hulled and trimmed before anyone can use it.
02 · Transformation
Frozen fruit is dried under vacuum: ice moves directly to vapor, so the fruit keeps its shape, color and aroma while most of its mass — water — is removed.
03 · Freeze-dried strawberry
Crisp slices, pieces or powder. Weighed, not trimmed. Stored dry and dosed to the gram.
04 · Applications
Frozen yogurt, bakery, dessert, breakfast, beverage and garnish — one SKU, three formats.
06 · Avocado transformation
From a fruit with variable ripeness, peel and seed to a measurable powder that becomes a culinary base on demand.

Water quantities are published only after lab or chef validation for each application. Until then every recipe reads “per technical sheet”.
Culinary system · Molcajete
Not a seasoning — a freeze-dried prepared salsa system: roasted tomato, chile, onion and garlic, dried as a finished culinary base and brought back with controlled water.

An operational culinary format — it is not presented as a replacement for every fresh-prepared salsa.
08 · Product systems
Freeze-dried fruits, culinary systems and functional beverage blends — organized by application, not by catalog.
Fruit in an operational format: slices, pieces and powders.

Savory bases built for execution: avocado and molcajete.
Repeatable fruit and botanical blends for beverage programs.
09 · Formats & applications
Functional beverage systems
Four fruit and botanical blends for hospitality, cafés, restaurants, spas, gyms and breakfast programs. Food and beverage systems — not supplements.

Product names describe flavor profiles. No health, detox or medical claim is made or implied.

One dose per serve, per jug or per dispenser batch — the same recipe card in every property. Powder-to-water ratios are published only from validated formulation data.

Images show application possibilities, not a specific validated formula.
11 · Fresh vs The Essence FoodTech
Compare steps, cold dependencies, waste exposure and portioning. We only quantify what has validated data behind it.
| Same usable output | Fresh | The Essence FoodTech |
|---|---|---|
| Handling steps on site | 7 steps: sort and discard damaged fruit, wash and sanitize, hull, slice or purée, hold refrigerated… | 4–5 steps: measure, (hydrate), mix, finish, serve |
| Mass to buy and move | ≈ 12.50 kg fresh-equivalent input | 1 kg freeze-dried |
| Prep at the point of use | Wash, peel, cut, trim | Measure, dose, use |
| Cold-chain dependency | Refrigerated storage | Reduced — dry format, per spec sheet |
| Waste exposure | Peel, seed, trim, spoilage | No peel or seed on site |
| Portion control | Varies with ripeness and staff | Dosed by weight |
| Storage footprint | Bulky, perishable | Compact, sealed |
| Shelf-life flexibility | Short, ripeness-dependent | Longer usable life, where validated |
| Consistency across sites | Seasonal and variable | Same specification |
Only the mass figure is quantified (from the configured yield). Other factors are qualitative until measured in your pilot.

Restaurant groups · QSR · Mexican & Tex-Mex · Commissaries
Restaurant groups carry the fresh-supply problem at line speed: ripeness, prep labor, cold rooms and waste — repeated in every kitchen, every morning.

Breakfast buffets · Beverage programs · Banquets · Room service
Breakfast juice and smoothie stations, banquets and pool bars depend on daily fresh fruit and staff skill. A measured powder turns that into a repeatable beverage program.

Cruise lines · In-flight catering · Galley operations
Provisioning far from port or kitchen turns fresh produce into a storage and spoilage problem. Dry formats change what has to be refrigerated and how much mass has to travel.

Industrial bakery · Fine pastry · Dessert production
Doughs, creams and fillings need natural fruit color and flavor that behave predictably. Powders and dry pieces add fruit without adding water to the formula.

Topping bars · Ice-cream concepts · Paletas
Fresh toppings are cut every morning and discarded every night. Crisp freeze-dried pieces and fruit powders keep the bar full with fixed grams per cup.

Cafés · Beverage chains · Bars & mocktails · Bubble tea
Cafés, bars and beverage chains need fruit that is fast to execute and easy to rotate: powders for drinks and rims, pieces for garnish, the same color every time.

Spas · Wellness concepts · Juice & smoothie bars
Wellness concepts sell consistency. Fruit and botanical beverage blends make the serve repeatable without a daily fresh-produce routine. Product names describe flavor profiles — no health claim is made.

Gyms · Shake bars · Sports clubs
Shake bars need fruit flavor that prepares in seconds and tastes the same at every location. Fruit powders and blends add fruit to the client’s own base — they are food ingredients, not supplements.

Event catering · Institutional food service · Commissaries

Virtual brands · Delivery-first kitchens · Multi-brand hubs

Cocktail bars · Hotel bars · Beach clubs · Mocktail programs
Fruit purées and garnishes are prepared before service and degrade through the night. Freeze-dried powders and pieces give bartenders color, aroma and garnish that are dosed, not improvised.

A Recipe Lab of 260 application concepts, each with workflow, scaling and validation status.
A usable-cost model built with your own purchase, labor, cold-chain and waste data.

17 · Commercial journey
Start with one ingredient. Prove the difference.
Start with one ingredientFAQ
Foods that are frozen and then have their water removed under vacuum by sublimation. They keep their shape, color and aroma, weigh far less and are stored dry.
Sealed dry formats are stored dry, without cold rooms; exact storage conditions and shelf life are set in each product’s specification sheet. That reduces cold-chain dependency compared with fresh produce.
There is no peel, seed or trim at the point of use, and you dose only what the recipe needs; the rest is resealed. We measure the difference in a pilot with your own data.
